There’s something satisfying about making a snack that’s both nourishing and simple with only a handful of pantry ingredients coming together in just a few quiet minutes. These pumpkin oat bites have become one of my favourite ways to bring a touch of autumn into our week.
They’re quick to make, easy to store, and just sweet enough for both little hands and grown-up snack moments.
Ingredients
- 150g rolled oats
- 100g pumpkin purée (or mashed roasted pumpkin)
- 3 tbsp nut butter (almond or peanut)
- 2 tbsp honey or maple syrup
- 1 tsp cinnamon
- A pinch of nutmeg
Method
- In a large bowl, mix the oats and spices.
- Add the pumpkin purée, nut butter, and honey or maple syrup.
- Stir until everything is well combined and the mixture should be sticky but firm enough to roll.
- Roll into small bite-sized balls (around 1 inch each).
- Place in the fridge for 30 minutes to set.
Store in an airtight jar in the fridge for up to five days and they make an easy grab-and-go snack or a sweet little addition to lunchboxes.
Notes & Variations
- Swap pumpkin for mashed sweet potato for a slightly different flavour.
- Add a handful of dark chocolate chips, seeds, or chopped nuts for texture.
- For dairy-free or vegan versions, use maple syrup instead of honey.
