Apricot & Coconut Muesli Bars

(Child-Friendly & Weekly Prep)

These muesli bars are a weekly staple in our house.

They’re soft, naturally sweetened, and easy to make in one batch — then stored in a jar ready for lunchboxes, after-school snacks, or quick energy boosts.

Ingredients:

  • Rolled oats
  • Dried apricots, finely chopped
  • Desiccated coconut
  • Ground flaxseed
  • Honey or maple syrup
  • Coconut oil

Mix, press into a lined tin, bake gently, and slice once cooled.

They’re not designed to be “perfect”. They’re just reliable, nourishing, and something I feel good about offering — which is often all that’s needed.
